Breakfast Casserole

For those that are starting their travels in the wee hours of the morning and putting sleepy kids tucked in the car for a “quieter, they will sleep” kind of drive, you will need breakfast when they wake. Some travel with the idea “we don’t stop until we get there” so Gordo’s has several great breakfasts, easy travel, and eat recipes! This will fill the littles up and be healthier for everyone! The Gordo’s Breakfast Casserole is just the travel companion for you! You can make this up the night before and right before you load those sleepy heads in the car, cut individual servings, pop them in the microwave, and put them into hot/cold containers that will keep them nice and warm until eyes open and growling tummies come to life! Eggs, hash browns, Gordo’s cheese, shredded cheese, milk, and sausage! YUM! All that cheesy goodness and protein and milk to start the day! Not tons of sugar leads to way too much energy in the car! INGREDIENTS:

  • 6 eggs
  • 16 oz of frozen hash browns (thawed out)
  • 1 tsp salt
  • ½ tsp of pepper
  • ½ garlic powder
  • 1 ½ cups of shredded cheddar cheese
  • ¼ cup of milk
  • ¼ cup of Gordo’s mild cheese dip
  • 1 lb breakfast sausage (optional)

HOW TO PREPARE:

Preheat the oven to 350 degrees and brown the sausage in a separate pan. Layer the thawed hash browns on the bottom of a greased 13×9 baking dish. If you are adding sausage, evenly layer the cooked sausage over the hash browns and sprinkle the shredded cheese on top on the sausage. In a bowl, mix together the eggs, seasoning, milk, and Gordo’s Cheese Dip. Pour the egg mixture over the sausage and hash brown layers and bake for 30-35 mins until the eggs are set. If you’d like, you can also add veggies like onions, tomatoes, or spinach to the egg mixture before baking!

Once cooked, you can put the breakfast casserole in the fridge and it’ll be ready whenever you want to heat it up! You can either put the whole thing back in the oven and reheat for 10-15 minutes or cut out a piece and heat it up in the microwave for 1-2 mins.

Fruit Dip

For those traveling from mid-morning into the early afternoon or for just a short couple-hour trip, our Gordo’s Fruit dip just might be what’s on the menu for good healthy snacks! Again, fruits of your choice, are cut and put into divided travel containers, then Gordo’s Fruit Dip into the other section. HOW TO PREPARE:

Heat Gordo’s Cheese Dip. Add powdered sugar and vanilla. Mix. Serve with fruit.

Cheesy Chicken Empanadas

For the family spending a wee bit more time on the roads and hitting lunch or dinner, Gordo’s has several easy prepare ahead- of-time-great-travel-filling dishes. This little jewel is all-in-one, self-contained flavor-packed goodness. Gordo’s Cheesy Chicken Empanadas! Only 5 ingredients. Cook ahead. Then heat and store in a warming container for travel. This handheld, self-contained meal is great for the littles, great for traveling, and great for taste! Chicken, Gordos cheese, taco seasoning, and pie crust! Mix, stuff, and bake! Bringing the family together in the car for travel – not just in space but in FOOD goodness – is a must so that when you arrive at your final destination, everyone is rested, fed, and ready to celebrate!

 

INGREDIENTS:

  • 3 cups cooked chicken, shredded
  • ½ cup Gordo’s Cheese Dip (any flavor)
  • 1 package taco seasoning
  • 1 (15 oz.) package refrigerated pie crusts
  • 1 egg & water

HOW TO PREPARE:

Preheat oven to 400 degrees F Line a Baking Sheet with parchment paper. Toss chicken in taco seasoning. Cook chicken in large skillet. Allow chicken to cool, shred. In a large bowl combine the chicken and cheese. Unroll 1 piecrust onto a lightly floured surface. Cut into rounds, using a 3-inch cookie cutter or cup. Re-roll dough as needed. Repeat with the remaining piecrust. Making as many circles as possible. In a small bowl, whisk together egg and 1-2 TBSP water. Arrange 1 dough circle on a clean flat surface. Lightly brush the edges with the egg wash.Place 1 large TSP of chicken in the center of the round. Fold the dough over the filling, pressing the edges with a fork to seal completely. Place on baking sheet. Repeat with the remaining circles and chicken mixture. Lightly Brush the tops of the empanadas with the egg wash. Bake in oven at for 15 minutes or until golden brown.
