The laughter MIGHT warm you up, but the best (and yummiest) way to do that is with one of the many Gordo’s cheesy, creamy soups! That’s right. CREAMY TOMATO SOUP

Nothing brings memories to the forefront of cold weather and gatherings than bowls of tomato soup and grilled cheese! Now you can step up your game and holiday flare by having this old-time tradition but adding the creamy goodness of Gordo’s Cheese and making it the centerpiece of any meal or get-together! Butter, thyme, garlic, onion, tomatoes, and of course, Gordo’s Cheese! The minute you start to sauté the ingredients, the kitchen begins to fill with mouthwatering smells. Again, you can use Gordo’s regular cheese or add a bit of Gordo’s Mild or Hot and really bring the heat.  However you choose to wrap up the flavor – Gordo’s will be one gift no one forgets!  

Tomato Soup and Grilled Cheese Sandwich

INGREDIENTS: 

  • ¼ cup (½ stick) unsalted butter 
  • 10 sprigs of thyme, tied together 
  • 1 medium onion, diced 
  • 2 garlic cloves, diced 
  • ¼ cup tomato paste 
  • 2 28-oz. cans of whole tomatoes 
  • 8 cups water 
  • ¼ cup (or more) Gordo’s Cheese Dip Original 
  • Salt and pepper to taste 

HOW TO PREPARE: 

In a large pot, melt butter over medium heat. Add onion, thyme, and garlic, cooking until onions become soft and translucent. Add tomato paste and continue cooking for five minutes. Add whole tomatoes with juices and water. Simmer for 45-55 minutes. Remove from heat, allowing to cool slightly. Remove thyme from the soup. Purée soup with a hand blender or in the blender until smooth. Add in Gordo’s Cheese Dip Original and allow to melt. Simmer for 10-15 minutes. Season with salt and pepper to taste. Top with croutons or serve with grilled cheese

 

MUSHROOM SOUP 

If you are like most, when you think of mushroom soup, you think of a can of cream of mushroom soup. Yaaaaa, NO. Not even close. Butter, button mushrooms, baby portobellos, onion, thyme, garlic, chicken broth, and 1 cup (or more!) of Gordo’s Original cheese dip. Get the celebration ready to gather around the table and warm up and chat while enjoying bowls of Mushroom Soup. This is another creamy soup that you can personalize by adding a tad of one of Gordo’s other flavors and keep on giving your guests a little “gift” in every flavorful bite!  

INGREDIENTS: 

  • 1/4 cup unsalted butter 
  • 1 package white button mushrooms, sliced 
  • 1 package of baby portobello mushrooms, sliced 
  • 1 white onion, diced 
  • 1 dried bay leaf 
  • 1 1/2 tablespoons all-purpose flour 
  • 6 stalks of fresh thyme 
  • 2 cloves garlic, peeled 
  • 4 cups chicken broth 
  • 1 cup water 
  • 1 cup Gordo’s Cheese Dip Original 
  • Salt and pepper to taste 

HOW TO PREPARE:  

In a large pot over medium heat, melt butter over medium to high heat. Add mushrooms to butter with a pinch of salt. Cook mushrooms, often stirring, until golden brown. Add onion and cook until translucent. Slowly stir flour into the mixture. Tie thyme stalks together in a small bundle and add to the mixture with garlic cloves and bay leaf. Add chicken stock and water and bring to a simmer. Simmer for about an hour. Remove thyme. Stir in Gordo’s Cheese Dip allowing it to melt in the soup. Season with salt and pepper to taste. 

 

BEER CHEESE SOUP 

Beer Cheese Soup. Yes, you heard that right. Beer. Cheese. In an amazing soup! Great for holiday parties, office get-togethers, family gatherings, and everything in between. Bacon, carrots, celery, onion, paprika, butter, cheese, and BEER! Imagine the smells that will fill the kitchen! All the goodness of bacon, cheese, butter, and beer! The aroma of the sautéing veggies. Let your family and friends unwrap the goodness of Gordo’s and be thanked over and over!

INGREDIENTS: 

  • 1/2 pound piece of slab bacon, sliced 1/3 inch thick and cut into 1/3-inch dice 
  • 1 container (16 oz.) Gordo’s Original Cheese Dip 
  • 3 cups chicken broth 
  • 1 cup all-purpose flour 
  • ½ cup butter or margarine 
  • ¾ cup finely chopped carrots 
  • ½ cup finely chopped celery 
  • ¼ cup finely chopped onion 
  • ½ teaspoon paprika 
  • 1/8 teaspoon black pepper 
  • 1/8 teaspoon ground red pepper 
  • 1 can (12 oz.) beer (lager or pilsner preferred) 

HOW TO PREPARE: 

In a large saucepan, cook the bacon until crisp. Remove bacon and excess grease. Add carrots, celery, and onion to saucepan until softened. Add broth, saving a small amount for roux; heat to boiling over medium heat. Add the beer and cook until reduced by half, 5 minutes. In a small saucepan, stir in flour, paprika, black pepper, and ground red pepper with a small amount of broth until lightly browned. Add this roux to a large soup mixture to thicken. Reduce heat; stir in Gordo’s Cheese Dip. Heat until cheese is melted, stirring occasionally. Stir in the bacon and season with salt and pepper. Add a few tablespoons of broth if the soup is too thick. Top with shredded cheese or chives, if desired. Serve with bread or crackers.  

All of our soups can be made a day or two ahead then warmed up and kept savory in a crock pot during the celebration. It’s an easy way to serve a warm, hearty dish at home or on the go! Bringing Gordo’s to any holiday celebration is a gift to all you know! You can also serve warm tortilla chips as any side with the soups and heat up Gordo’s Cheese Dip for a twist on crackers!
