The Best Cheesy Soups

Always a cool weather comfort soup, Loaded Potato Soup just oozes with flavor goodness in every spoonful. Whether outside around the fire pit or snuggled inside with a good book, this recipe is loaded TWICE with cheesy goodness – IN the soup and ON top of the soup. Cheese overload here we come! Next up on the favorite flavor factor for soups is the yumminess of Broccoli Cheese Soups. This soup is a great way to slip in some extra veggies to the kiddos without a fight!  Lastly, in a nod to our Northern friends, how about some warm and savory Salmon Chowder? That’s going on my menu! Absolutely FLAVORFUL in every bite.  So, no matter your preference, Gordo’s can join in on keeping you warm and satisfied this fall! 

Extra Cheesy Loaded Potato Soup 

When you hear the words “loaded potato” ANYTHING – cheese and bacon overload pop into mind!  There are many ways of making this cool weather favorite but our version has TWICE the cheese! You add Gordo’s creamy goodness in the soup, followed by grated cheddar on top.  Potatoes, butter, half and half cream, broth, bacon, milk, sour cream, Gordo’s Original Cheese dip, and cheddar topping, what more could you ask for? The nice thing about this potato soup is that it is a creamier, thicker base that won’t slosh around (and risk any chance of losing one drop).  Easy to carry out to a fireside gathering or a walk into the living room to catch a game and enjoy it!

INGREDIENTS:

  • 8 medium sized potatoes – cubed
  • 1 stick butter or margarine
  • 3 tablespoons flour
  • 1 cup diced onions
  • 2 cups half&half cream
  • 1 container Gordo’s Original Cheese Dip
  • 1 can chicken broth
  • 2 cups milk
  • 1 cup bacon bits
  • 1/2 tablespoon pepper
  • Cheddar cheese

HOW TO PREPARE:

In large pot, boil potatoes 15 minutes or until tender.  Remove from pot, drain and set aside.  Place 1 stick of butter and onions in pan and sauté them until tender.  Add 3 tablespoons of flour to butter and onions and stir until all is incorporated.  Brown this mixture about 2 minutes – be careful not to burn.  Add milk, cheese dip, broth, half&half cream and pepper.  Stir until blended together.  Add your potatoes back to the pot. Stir in bacon bits. Ladle the soup into bowls, dollop sour cream, sprinkle with remaining bacon bits, cheese and chives.

Broccoli Cheese Soup 

Next up for those veggie lovers, Broccoli Cheese Soup!  Getting your green veggies in with LOADS of FLAVOR.  Of course, any recipe can be tweaked to your preference – we LOVE using little shredded carrots and loads of garlic, just sauté this with the onions and butter.  When you pour in the broth, it simmers off the flavor on the bottom of the pan and you better have plenty made, because the crowd will want seconds and thirds of this crowd-pleaser. Gordo’s Cheese Dip helps this to be one of the creamiest soups out there!

Cheesy Salmon Chowder

We certainly hope you have a pot big enough to fix this next “soup” in!  No wonder the Northern folks love these chowders.  Butter (yum), onion, celery, carrots, potatoes, corn, milk, broth, and the creamy, buttery goodness of Gordo’s Cheese!
