- ¼ cup (½ stick) unsalted butter
- 10 sprigs thyme, tied together
- 1 medium onion, diced
- 2 garlic cloves, diced
- ¼ cup tomato paste
- 2 28-oz. cans whole tomatoes
- 8 cups water
- ¼ cup (or more) Gordo’s Cheese Dip Original
- Salt and pepper to taste
HOW TO PREPARE:
In large pot, melt butter over medium heat. Add onion, thyme, and garlic, cooking until onions become soft and translucent. Add tomato paste and continue cooking for five minutes. Add whole tomatoes with juices and water. Simmer for 45-55 minutes. Remove from heat, allowing to cool slightly. Remove thyme from soup. Purée soup with hand blender or in blender until smooth. Add in Gordo’s Cheese Dip Original and allow to melt. Simmer 10-15 minutes. Season with salt and pepper to taste. Top with croutons or serve with grilled cheese.
