1 lb ground beef
1 bell pepper, diced
1 oz packet taco seasoning
3/4 cup water
15 oz can black beans, drained
15 oz can corn, drained
2 cups salsa
2 cups shredded Mexican blend cheese
1 cup Gordo’s Cheese Dip, heated
6 flour tortillas (burrito size)
Directions
Heat oven to 375F. In a large skillet on medium high heat, add ground beef and peppers. Break apart the beef and cook until browned. Drain excess grease.
To the pan, add taco seasoning and water. Stir and cook until the mixture has thickened (1-2 minutes).
Add black beans and corn to the pan and stir. Turn off the heat.
Grease the sides of a 9×13 pan. Spread 1/2 cup of salsa on the bottom of the pan.
Lay down two tortillas so they overlap in the middle. Fold over the ends.
Spread 1/3 of the beef mixture evenly over the tortillas.
Drizzle 1/3 cup Gordo’s Cheese Dip over the beef, some salsa and 1/2 cup shredded cheese. Add two more tortillas that overlap and continue the same process two more times. Can go a little heavier on the salsa, Gordo’s Cheese Dip and shredded cheese on the top layer if desired.
Bake uncovered for 25 minutes. Remove from the oven and let sit for 10 minutes. This will make it easier to cut.
Serve with green onions, sour cream, guacamole, salsa and more Gordo’s Cheese Dip if you like!
