2 Tbsp olive oil
1/2 bell pepper, diced
1/2 onion, diced
1 1/2 cups uncooked rice
2 cups water or chicken broth
1 cup salsa
1 lb uncooked chicken breast, diced
16 oz Gordo’s Cheese Dip
1/4 cup green onions, sliced
Optional: 1 packet of Sazon Goya
Directions:
In a heavy skillet over medium high heat add olive oil, diced onions and peppers. Cook and stir for five minutes.
Add the diced chicken breast, stir and cook for 2-3 minutes.
Add the rice to the pan, stir and cook for another 2-3 minutes.
Pour water and salsa into the pan and stir to combine. Add packet of Sazon Goya if desired or add salt and pepper to taste.
Bring to a boil and cover with a lid.
Turn the heat down to low and cook for 20 minutes.
Turn off the heat and warm up Gordo’s Cheese Dip in the microwave. Pour Gordo’s over top of the chicken and rice and sprinkle with green onions. Serve!
