Because let’s be real y’all, watching the game is fun and all…but nailing the pre-game snacking warm up or tailgate guarantees a great gameday. So win or lose these recipes will make sure everyone enjoys the gameday together and goes home happy!
Meatball Subs
Nothing says hearty like a sub! This mouth watering meatball sub is filling and delicious ! The best part? You can warm your meatballs and sauce in a crockpot to be ready to pop in a roll and top with Gordo’s whenever your party gets hungry!
INGREDIENTS:
- 1 (16 oz.) package frozen meatballs
- 1 jar spaghetti sauce
- 1 container Gordo’s Cheese Dip
- 4 sub rolls
HOW TO PREPARE:
Place meatballs and spaghetti sauce in a skillet. Slowly simmer meatballs and sauce 20-30 minutes. For crockpot method, cover and cook on low heat for 3-4 hours, or until bubbly and the meatballs are heated through. Melt Gordo’s cheese dip according to package directions. Fill sub rolls with meatballs. Pour melted cheese over sub. Have plenty of napkins because it’s going to get messy!
Fajita Nachos
This next recipe will have everyone oohing and ahhing! This dish is fairly simple and it will feed a crowd as an appetizer or a family, for a fun dinner. Don’t worry you can sneak in a few veggies for good measure. It’s packed with flavor and a satisfying variety of textures for your palate. Feel free to get creative and toss on any of your extra favorite ingredients, it’s hard to go wrong.
SERVES: 6-8
INGREDIENTS:
- 1 ½ lbs flank steak, or chicken
- 1 container any flavor Gordo’s® Cheese Dip
- 1 bag of tortilla chips
- 1/2 onion (sliced)
- 1 green pepper (sliced)
MARINADE:
- 1/4 cup fresh lime juice
- ¼ cup minced fresh cilantro
- 2 T. olive oil
- 2 T. Worcestershire sauce
- 2 T. chili powder
- 2 t. minced garlic cloves
- 1 t. ground cumin
- 1 t. salt
HOW TO PREPARE:
Combine all your marinade ingredients into a 1 gallon zip lock bag and mix well. Place steak or chicken into the marinade bag and refrigerate at least two hours (turn occasionally). Heat your skillet and cook meat 3-5 minutes on each side depending on the thickness of the meat. Set aside to rest for 10 minutes before slicing. With meat cooling, slice onion and pepper. Sauté in skillet until tender. Slice meat thin on the diagonal. Arrange a thick layer of tortilla chips, next layer meat, onion and pepper, and top your nachos off with Gordo’s Cheese Dip over everything. Add toppings of your choice; sour cream, salsa, guacamole, pico de gallo, lettuce, tomatoes, and cilantro.
Buffalo Cauliflower
Now here’s a twist on a tailgate classic! We all love buffalo wings and buffalo chicken wing dip, but our new favorite is buffalo cauliflower! A great way to add some veggies to the mix without compromising flavor!
Serves 8
INGREDIENTS:
- 2.5 large head of cauliflower cut into florets
- 1 1/4 cup flour
- 1 1/4 cup water
- 5 teaspoon garlic powder
- 2.5 teaspoon paprika
- Salt and pepper to taste
- Cooking oil
- 1 1/2 cup buffalo sauce
- Serve with Gordo’s Spicy Ranch Dip
HOW TO PREPARE:
Pizza Dip
Okay guys…trust me on this one. It’s the creme de la creme of dips. Like pepperoni on your pizza? Add some. Want some olives too? Do it. Literally your favorite things about pizza…but a dip!
Serves 8-10
INGREDIENTS:
- 8 oz Original Gordo’s Cheese Dip
- 8 oz favorite marinara Sauce (any flavor or style)
- 4 oz grated Parmesan
- ½ packet dry Italian Dressing Mix
- Desired toppings
HOW TO PREPARE:
Heat up Gordo’s Cheese Dip in the microwave as directed. Pour into a microwave safe bowl. Add the remaining ingredients and mix well. Heat the entire mixture for 60 second in microwave, Stir. Depending on the microwave you may have to heat another 30 seconds. If desired top with mozzarella and bake until melted. Garnish with any of your favorites: grated Parmesan, diced bell peppers, diced olives, diced onions, diced tomatoes, and bacon bits! You can have your pizza dip anyway you want it! Serve with Ritz crackers and sliced French baguettes
