It’s the New Year, we’re all filled with hope and optimism that 2019 will be the best one yet. I’ll tell you the best resolution you can make this year, and that is EAT MORE QUESO. Cheese dip is guaranteed to increase your happiness, therefore making you more productive, successful and wealthy. It’s a proven chain of events, more queso = better quality of life. Gordo’s is here to help you achieve that. I know what you’re thinking, ‘but it’s the new year and I’m on this diet, I can’t have cheese dip.’ WRONG. We all like to start off the new year by eating right and exercising, I get it. I can help you with that as well. Believe it or not, Gordo’s Cheese Dip is keto friendly. I’m also going to give you some healthy recipes you can make to start the year off right. You can be healthy and still eat cheese dip because after all, life is all about balance.

Mexican Taco Salad

This salad is simple and can serve as a well-balanced healthy, meal to get you back on track with your goals. If you’re starting off the New Year with a keto diet, check out this recipe from Keto B Fitness for a Keto Veggie Taco Salad!

INGREDIENTS:

  • ½ lb of lean ground turkey
  • Taco seasoning
  • 1 bag of mixed greens
  • 1 small tomato diced
  • ½ red onion, diced
  • 1/2 cup of black beans
  • 1/4 cup salsa
  • Gordo’s Mild Cheese Dip
  • Optional higher calorie additions: Sour cream, tortilla chips and shredded cheese
  • Dressing of choice (or let the salsa and cheese act as your dressing!)

HOW TO PREPARE:

First, cook the lean ground turkey meat in a skillet until browned. Drain excess liquid and add ½ packet of your favorite taco seasoning. Set meat aside while you prepare the salad. Also make sure to rinse the black beans, you can put them on the salad at room temperature, but I prefer to put them in the microwave for 1 minute, so they are warm. Dice up your veggies and toss them with your mixed greens. Top the salad with the cooked ground turkey, beans and salsa. Drizzle with desired amount of heated Gordo’s Cheese Dip and enjoy.

Chicken Quinoa Bowl

This meal is packed with protein and veggies! Great to eat for a filling lunch or post workout protein boost.

INGREDIENTS:

  • 1 cup of quinoa cooked
  • 1 grilled and marinated chicken breast
  • 3 handfuls of spinach
  • ½ cup of shredded kale (use the food processor)
  • ½ red onion diced
  • ½ cup diced mushrooms
  • 1 small green bell pepper, chopped

HOW TO PREPARE:

Cook 1 cup of quinoa as directed, this usually takes about 10 mins. While the quinoa is cooking, put the shredded kale, spinach, mushrooms, onions and chopped pepper into a large pan with about 1 tbsp of olive oil. Sautee the veggies for about 5 mins. Add salt and pepper to taste. Put the cooked quinoa is a bowl and mix with sautéed veggies. Dice up your grilled chicken and put on top. To really make the flavor pop, I like to top with a drizzle of Sriracha sauce and little bit of Gordo’s Original Cheese Dip.

Egg White Cups

This is a great healthy breakfast that you can make ahead of time and refrigerate or freeze the extras. A lot of people skip breakfast but eating at least a small amount in the morning can help balance your meals throughout the day and assist with weight loss. These are also  great with any of your favorite veggies!

INGREDIENTS:

  • 2 ½ cups of egg whites
  • 3 eggs
  • ½ cup of feta cheese
  • 1 cup of spinach
  • ½ chopped mushrooms
  • 1 small tomato diced
  • 2 tbsp plain Greek yogurt

HOW TO PREPARE:

Use as 12 count muffin tin and spray with cooking spray. Combine all ingredients and evenly distribute the mixture into the 12 muffin cups. Bake at 350 degrees for 25 mins until risen and lightly browned on top. You can use any veggies or cheese that you prefer for this recipe!

PRO TIP: Chia and hemp seeds are great to add to any meal. They don’t have any flavor and can be added to almost anything for extra nutritional value. Chia seeds are especially good to add to things like yogurt, oatmeal and smoothies and serve as a great antioxidant. Hemp seeds with give you extra protein!
