Did you know that in the U.S., corn production is twice that of any other crop?  Wow, we grow a lot of corn in America!  We often think of corn as yellow but it can be found in a variety of colors such as white, pink, black and blue.

Corn is a considered a healthy whole grain food.  It is high in fiber, folate and B-vitamins.  A diet rich in folate is helpful in controlling birth defects, heart attack, strokes and cancer.  The B-vitamins in corn are  necessary for brain function and energy production.

Choose corn that has been kept cool.  Make sure the kernels are plump and juicy.  Refrigerate after purchasing and serve as quick as possible.

Enjoy corn boiled, broiled, sauteed or grilled.  Serve it on the cob with salt and butter or olive oil.  Yum Yum!
