Tomatoes are actually considered a fruit. They are high in the cancer busting antioxidant, lycopene. They are also high in Vitamins C and A. They are high in fiber and are a natural anti-inflammatory food.
Choose tomatoes that have a deep, rich color and are free of cracks, bruises or soft spots.
Store tomatoes at room temperature until cut and in the refrigerator after cutting.
Enjoy tomatoes raw in salads and salsas. Use tomatoes as a base for sauces. My favorite way to eat them: Thinly sliced fried green tomatoes.
