Today I want to look at sweet “bell” peppers.  These beautiful vegetables can be green, red, yellow or orange.  They have a very mild flavor.

They are high in Vitamins C and A as well as folate.  Red bell peppers have the highest level of antioxidants than most other vegetables.  Eating peppers on a regular basis can reduce your risk of heart disease, diabetes, cancer, arthritis and asthma.  You can’t get that in a pill!

Choose peppers with a smooth, firm flesh.  Pick peppers with rich colors and no soft spots.  Wash thoroghly, remove the cap and scoop out the seeds.  If roasting, leave them whole.

Enjoy peppers raw on a vegetable tray, steamed, roasted or sauteed to partner with other ingredients.
