Be sure to eat the skin of the squash because it is high in nutrients. Squash is a good source of Vitamin C, beta carotene and antioxidants. It is high in fiber and potassium and low in fat, sodium and cholesterol.
Choose squash that is firm and fairly heavy for it’s size. Make sure it is free from nicks or bruises. Store squash in the refrigerator for up to one week.
Squash can be eaten raw on a vegetable tray. It also is good steamed, sauteed, or grilled. Add dill, lemon juice or lemon pepper to squash for a fresh new flavor.
